Nigerian party Jollof is practically everyone’s favourite.
Preparation Time: 10 minutes.
Cooking Time: 50 minutes.
Servings: 5-7.
Ingredients
- 4 Cups Rice (Easy Cook)
- 1/2 Cup Tomato Puree
- 3-4 Large Tomatoes
- 3-4 Red Chilli Pepper (tatashe)
- 2 Red Bell Pepper
- 5 Scotch Bonnet Pepper (Atarodo)
- 2 Onions
- 2 tablespoonful Olive Oil
- 2 Cups Chicken/Beef Stock
- 2 Teaspoon Curry Powder
- 2 Teaspoon thyme
- 3-4 Chic ken Stock Cubes
- 1 Teaspoon any seasoning of choice
- 2 -3 Bayleaf
- 2 Tablespoon Cooking Butter
- Salt to Taste.
Cooking Steps
Put a pot on the fire, add some Olive oil, onions, and tomato puree and allow to fry for some minutes.
After frying the tomatoes puree, add the boiled tomato and pepper mix, add the stock, and stir.
Add curry, seasoning, salt, and thyme. Throw in some bay leaf, and fry for a few minutes.
Add water to the pot content and allow to simmer. Wash your easy-cook rice and pour into the content in the pot and stir and leave to simmer on low to medium heat.
When it’s almost ready and the water is almost drying up, add some cooking butter, some sliced fresh tomatoes, and some onion slices, and cover tightly with cooking foil or paper.
When rice is all done, allow to steam under very low heat for some minutes, and stir well.
