My family and I spent the weekend in Orlando to attend my nephew Nic’s 15th birthday party. How thrilling! Universal Studios, food, and entertainment would fill the weekend. My husband and children, my mother, my brothers, my sister, our close friends, my nieces, and my cherished nephew would all live together.
All of us have never taken a trip quite like this, and I couldn’t wait. The previous week, Randy and I entertained some of his Venezuelan family and had a terrific time getting to know their way of life, challenges, and aspirations. I was looking forward to spending time with my loved ones and getting some rest and relaxation this weekend.

We slept in a huge five-bedroom mansion in Kissimmee since my sister, the travel diva, had planned everything.
We all departed South Florida on Friday afternoon and were the first to see the huge kitchen and dining area, which was absolutely astounding. It was a spacious, lovely home with four bedrooms upstairs, one on the first floor, an indoor pool with a screen, flat-screen TVs, Xbox, and video games. Everything was perfect.

I went downstairs and discovered Randy preparing some scrambled eggs and maple bacon, while Mom was in charge of the kitchen. Oh, yes. After visiting the grocery shop, Randy and my brother Ricky stocked the fridge with some necessities.

For one thing, pumpkin is quite healthy, versatile, and downright delicious. You guys, it’s fall, and pumpkins bring back happy, cozy, wonderful, and loving memories.
Normally, pumpkin butter needs apple cider, but I decided to add OJ for a zesty kick. I adore how easy it is to create.
It can be used in smoothies to enhance potassium levels, added to French toast casseroles for flavor, spread on toast with raisins, or eaten straight off the spoon. Yum! Do you want some bread to go with your pumpkin butter then?

INGREDIENTS
- 1 (29-ounce) pumpkin puree
- ¾ of orange juice
- 1½ teaspoon of fresh ginger
- ½ teaspoons of ground cinnamon
- ¾ sugar
- One teaspoon of ground nutmeg
NOTES
Be careful not to burn yourself because the mixture is extremely messy and sputtery. The pumpkin butter becomes quieter as the moisture starts to evaporate. Last but not least, you may add the banana puree to pumpkin butter for a comfort food twist!
